Simplified Brewing Water Chemistry & Beer Styles

Martin Brungard P.E., D. WRE - Bru'n Water

Thursday, March 23rd

4:00 PM PT - 7:00 PM ET - 1:00AM CET

Calculators, Chemistry & Styles

Join Martin Brungard, a skilled water engineer, for his discussion on evaluating brewing water as well as using calculators and chemistry to make better beer. He'll also venture into which styles are water chemistry driven.

What You Will Learn:

  • Evaluating Your Water(And How to Adjust it)
  • Styles where the water chemistry is key
  • Adjusting Bottled Water (Costco, Crystal Geyser or Aquafina or Dasani, and RO water)

đź“·Commercial Calibration (online guided tasting)

  • Fruh Kolsch
  • Stone IPA

Henry "Thank you for the great presentation!! Excellent content!!!"

Lou: "great presentation Doug. Both educational and entertaining. I've learned a lot on a style I love!"

Erin: "I can't thank you enough, - cheers to you!"

Martin Brungard has been a professional engineer for the past 37 years, working on a variety of civil and environmental projects across the US.

He was exposed to homebrewing while living in Tallahassee, Florida, and took to it like a duck to water. But it became apparent to him that there was one brewing variable that differed from location to location: Water. He had found by trial and error that brewing with Tallahassee water required acid additions to make better beer.

When Martin moved to Indiana in 2009, he knew he had to come up with a better way to understand, assess, and treat water to make better beer. While he was quite familiar with water chemistry from his engineering profession, he found out that brewing water chemistry is quite different. That is the quest that produced Bru’n Water software and the assembly of the very useful Water Knowledge page on the Bru’n Water website. Martin went on to hone his brewing water expertise and authored dozens of articles and presentations for the AHA and clubs. He went on to serve on the AHA Governing Committee and served as a technical editor for Brewing Publications’ book: “Water, A comprehensive guide for brewers”.

Martin continues to serve as a technical consultant to breweries and brewers around the world.

Bru'n Water gives a brewer the ability to assess what minerals, acid, or dilution should be incorporated into their brewing water. It also tells the brewer what the effect of those adjustments will be. Bru'n Water is also unique in its ability to assess what effect the Brewer's actual mash grist will have on the mash pH. Mash pH plays an important part in the fermentability and character of the brewer's wort and the taste and perceptions of the finished beer.
