The Ultimate Fermentation
Fermenting Beer to 56-Proof (28% ABV)
Shelley Smith: Sr. Brewing Mgr, Boston Beer Co.
Join me as I discuss brewing, fermenting, and barrel aging one of the highest alcohol production craft beers in the world. Illegal in 15-states, the production of this beer requires multiple yeast additions, racking, barrel aging, and blending. It's unbelievably complex, yet Boston Beer has successfully brewed Utopias bi-annually since 2002.
What You Will Learn about High Gravity Brewing:
- Homebrewer Crispy Frey: 19% ABV Triplebock
- Brewing exploration through the history of Utopias
- Why barrel aging is critical
- The art of blending beer
